Cheap, Fast, & Easy: Mango & Avocado Salad

               Today’s recipe post is one of my favourite summer salads! I used to make this ALL the time at university because it’s 3 ingredients (I was a broke student), it takes under 5 minutes to make (I was always busy), & it simply tastes amazing (my one roomie still requests it nearly 3 years later). I discovered the recipe while trying to shed some extra pounds for an upcoming spring break trip to Dominican; my goal being to find something that was healthy but didn’t lack in the flavour department because as discussed… I LOVE food & there is absolutely no way that I’ll stick to a weight loss plan if it doesn’t taste good – I was also just starting to get used to the idea of salads at the time & was slightly terrified at the prospect of eating just chicken & greens for the months leading up to my vacay – SO without further ado I give you my Mango & Avocado salad.

 

Ingredients: makes 4 servings

  • 2 mangos (cubed)
  • 2 avocados (cubed)
  • 1/2 small red onion (diced)

Now this salad is perfectly fine, especially if you’re on the go or strapped for cash, however if you wanted to add some extra flavour toss this quick dressing on it (it’s yummy, & also my ‘go to’ salad topper)

Optional Dressing:
  • 1 tablespoon balsalmic vinegar
  • 1 tablespoon lime juice
  • 2 tablespoons of olive oil
Directions:
Literally just put all of the ingredients into a bowl & serve. If you are planning to add the dressing whisk together in a bowl before pouring over the salad!

Some Notable Alterations: 
I’ve heard that crab goes nice with an avocado & mango salad, I personally used to cook up some sort of herb chicken (with whatever was in my cupboard) if you wanted to make this dish a full meal size.
