Lime & Herb Grilled Chicken. Watermelon & Cucumber Salad with Lime, Honey & Balsamic Vinegar Dressing

                Love is an understatement in terms of my feelings toward food. I can never get enough of it, reading menus and watching the Food Network while running on the treadmill are some of my favourite hobbies… Seriously. Summer also just so happens to be my absolute favourite cuisine season because I love BBQ and the abundance of fresh, colourful produce that comes with it. The options are endless! This weeks recipe combines my love of BBQ and fresh summer salads and it’s just in time for Canada Day weekend! This recipe makes 4 servings and it is so easy to make, not to mention very tasty!



enough olive oil to coat chicken

1/2 cup of lime juice

3 garlic cloves (minced)

thyme (or whatever herb you have in your kitchen! I am a rosemary addict!)

4 organic chicken breasts

Watermelon & Cucumber Salad:

1/4 cup of chopped red onion

4 cups of cubed watermelon

1 cup of cubed cucumber

1/4 of a package of feta cheese

Lime & Honey Dressing:

2 tbsp of lime juice

2 tsp balsamic vinegar

1 tsp honey

1 tsp olive oil

Paleo Lifestyle Adjustments: simply remove the Italian dressing from the chicken portion. Add some more herbs for extra flavour (oregano, rosemary etc). Take out the feta cheese from salad option, throw in some mint or seeds to give the salad more dimension (pumpkin seeds work really nicely with this salad). Eliminate the honey from the salad dressing & it will taste just as good.



Add the first 4 ingredients into a bowl & whisk together to create a marinade. Coat the 4 chicken breasts with the marinade & let it sit for at least an hour in the fridge covered (the longer, the better but try for at least an hour). Next, throw these bad boys on the grill (medium-high heat aka 375-450 F) for a few minutes on each side. Cooking time will be different with everyone so make sure to check that your chicken is cooked all the way through before serving.

Watermelon & Cucumber Salad:

Add all 4 ingredients into a bowl. Toss and mix together well.

Lime & Honey Dressing:

Add all 4 ingredients into a bowl. Whisk together. Pour dressing over watermelon & cucumber salad.

Ready to serve!
